
I used here two raw ingredients that I find in recipes more frequently cooked: tofu & zucchini. I started to eat raw zucchini quite recently actually. I was used to seeing them cooked, so I cooked them too! I now prefer them raw. With tofu, it’s the same. And I had to search to check if it’s possible to eat it raw. Yes, it is! Here I mixed it in a lime&mint sauce and then I added it to the spiralized zucchini to create a light but complete meal.

Zucchini Mint&Tofu Salad
Servings: 2 peolple
Ingredients
- mint leaves, thinly chopped
- 2 tbsp olive oil
- half lemon or lime, squeezed
- dry garlic
- salt&pepper
- 1 zucchini, spiralazied or grated
- 100 g tofu, cut into small cubes
Instructions
- Prepare the marinade by mixing chopped mint, salt&pepper, and lemon juice. Add the oil at the end to allow the salt to melt
- Add the tofu to half of the sauce. Mix and set aside (while you prepare the zucchini)
- Set the zucchini on a bowl add the tofu cubes and then the rest of the sauce
- Sprinkle with more pepper (& some dry garlic)
- Enjoy!
