I literally adore this salad. The creaminess of the sauce makes it one of my favorites.
I have this salad mostly as a single dish. That’s why in my recipe you’ll find this serving for 1-2 people, depending if it’s a side or a single dish.
It’s inspired by the famous coleslaw salad. It’s similar but not quite the same. I added some grated apples (because I live in Switzerland and I add apples to many many things…) And I didn’t add any (vegan) yogurt.
I also added some pumpkin seeds. If you follow my blog, you know that I add seeds wherever possible. They’re healthy and crunchy. And I love them 🙂

Vegan Creamy Salad

- 1 tbsp almond butter
- 1 tbsp mustard
- 1 tbsp vinegar
- 2-3 tbsp water, or just enough
