A sweet carrot salad suitable for breakfast or as a snack
I like this salad particularly in the wintertime. The spices, the orange, and the dates give it the perfect flavor combination for a Christmas treat. Tossed with almond butter it is creamy and rich.
You can enjoy it fresh and crunchy in a raw version or sweet and tender in a cooked one.
Sweet Carrot Salad with Dates and Orange
- 2 or 3 large carrots
- 6 dates, pitted, cut in small pieces
- 1 orange, peeled, sliced
- (olive oil)
- 1 tbsp almond butter
- ground cumin
- pomegranate seeds (fresh or dried) as topping
- You can choose to prepare this salad raw or cooked depending on your preference. Raw will be a bit more crispy. Cooked it will be softer and a bit sweeter. Wash and grate or spiralize the carrots (there's no need to peel them). You can decide here to cook them for about 5 minutes at medium heat with a little olive oil.In a bowl mix well ingredients 1 – 8. Serve and garnish with some pomegranate seeds and some more cinnamon and cumin.
