A couple of years ago I found an amazing peach cake recipe and it soon became a favorite of mine. Unfortunately, I lost the recipe. So of course, I tried to make my own version.
I am pretty sure my version has much less sugar than the original one. But it has just enough of it 😋!


Peach&Ricotta Cheese Cake
Servings: 6 servings
Equipment
- oven
- round cake mold
- (electric) whisk
Ingredients
- 3 peaches, in big chunks
- 250 g ricotta cheese
- 1 tbsp sugar
- 1 egg
- 50 g butter
- 3 tbsp flour, (about 60 g)
- 1 tsp baking powder
- 2 tbsp sliced almonds, as a topping
Instructions
- whisk thoroughly egg, sugar, melted butter, flour, baking powder
- add ricotta cheese, and whisk briefly
- with a spatula gently incorporate the peaches to the dough (leave some to use as a decoration on top)
- set the dough in a cake mold and decorate with some peach and almond slices
- cook for about 20 minutes at 200°C
- turn off the oven and let the cake in it rest for about 20 more minutes
