A very quick and crunchy breakfast idea

Apples were never my favorite fruit, but since I live in Switzerland, an apple-heaven, I decided to make them my friends. I still prefer mangos but I am also limiting my overseas food consume.
Lately, I discovered that I love apples with soy yogurt, cinnamon, and granola, like in this recipe I created for my Instagram advent calendar.

If I want to indulge a bit I then add a spoon of creamy almond butter.
The combination of these two is just perfect. I sometimes slice an apple and spread it with almond butter. Yummy!!!

Apple Breakfast Salad with Soy Yogurt, Granola and Almond Butter
A sweet salad for a very light breakfast or snack
Servings: 1
Equipment
- spiralizer or grater
Ingredients
- 1 tbsp almond butter
- 1 apple
- 2 tbsp soy yogurt
- 2 tbsp granola
- ground cinnamon
Instructions
- In a small bowl mix well almond butter with a tsp or two of water. This way it will be slightly lighter in taste and consistency. You can skip this passage if you prefer. Spiralize or grate the apple – keep the peel – and put it on a plate. Top with soy yogurt, granola, cinnamon, and almond butter. Enjoy!
